Global Problems of Population Growth (MCDB 150) 1) Population in China: Until recently, Chinese families did not much alter their fertility depending on life events like deaths of children. However, under government prodding and eventually coercion, fertility drops drastically in China in the 1970s, but, to counteract momentum, the One-Child Policy starts in 1979-80. 2) Population Growth and Economic Development: In Asia, rapid fertility drops have preceded economic booms by ~15 years. In this time, children grow up and become workers. With many workers and fewer children to support, savings and investments rise causing the boom. Non-Asian countries with rapid fertility drops, like Ireland, fit this model. Sub-Saharan Africa, with still high fertility, makes little economic progress. 00:00 - Chapter 1. Changes in societal models act on the ambient discourse and the representations of food. Thus, over the past 50 years, we have gone from an epicurean discourse to a discourse of involvement by way of 5 intermediate phases: restrictive, dynamic, light, cacophonous, and health and pleasure. The current changes, in contrast to those of other periods, can be a real point of departure insofar as they bring into question the fundamentals of our society and food systems. While safety is always central to consumer expectations, practicality, health, naturalness and pleasure are at the core of product innovation. Added to this are new public expectations: the environment, ethics, origin and traceability, animal welfare, etc., all features of sustainable development. The recent crisis has moreover led to significant purchasing changes that promote the fundamentals of sustainable development: a decline in hyperconsumption, a return to raw products and cooking (94% of the French believe that preparing home-cooked meals is a source of pleasure and fulfilment, TNS 2010), making room for responsible and enjoyable food and conviviality (Laisney, 2011).
